Here is Mandy's delicious recipe for her bean soup she makes on Good Friday! Enjoy!
Step One - soak beans in water 24 hours before making (or boil for 2 hours before preparing) - drain and rinse beans.
1 ½ cup dried beans
4 cups water
Step Two - Saute together until soft and translucent - add to pot
½ cup butter
½ cup chopped onion
½ cup chopped green pepper
½ cup chopped celery
2 cloves garlic
Salt and pepper to taste
Step Three - Add sauteed vegetables and beans to pot - add the rest of ingredients and bake in oven at 325 degrees 6 - 8 hrs - check water levels occasionally to see if you need to add more water (more than likely you will need to add more water)
1 chopped zucchini
3 carrots sliced
1 cup celery (chunky chopped)
1 can of diced tomatoes
4 cups of water
Vegetable bouillon cube
More salt and pepper to taste
Bean soup can be made faster by simmering on the stove for 2 - 3 hrs instead of baking in the oven.
***Add water to make soup - thicker or thinner (whatever your preference) however the more water you add, the more likely you will need more seasoning.
